Ingredients
6 cups chicken broth, or as needed
3 Tbs olive oil, divided
1 lb portobello mushrooms, thinly sliced
1 lb white mushrooms, thinly sliced
2 med shallots, diced
1 ½ cups Arborio rice
½ cup dry white wine
4 Tbs butter
3 Tbs finely chopped chives
⅓ cup freshly grated Parmesan cheese
sea salt and freshly ground black pepper to taste
