2 cups rolled oats
1 cup peanut butter
⅔ cup honey
½ cup dark chocolate chips
½ cup ground flax seeds
½ cup chocolate-flavored protein powder
½ cup unsweetened shredded coconut
2 Tbs chia seeds
1 tsp coconut extract
¼ cup chopped coffee beans
2 tablespoons cocoa powder, or more as needed
Directions
Mix oats, peanut butter, honey, dark chocolate chips, flax seeds, protein powder, coconut, chia seeds, and coconut extract together in a large bowl; fold in coffee beans. Form mixture into 1-inch balls.
Place cocoa powder in a small bowl. Roll each ball in the cocoa powder until coated.
Recipe Tip
Super pre- or post-workout snack. Store balls in freezer or fridge and thaw for use. You can use vanilla protein powder instead of chocolate, and semisweet chocolate chips instead of dark chocolate.
