Ingredients:

  • cooking spray
  • 1 (32 oz) pkg frozen hash brown potatoes, thawed
  • 1 (16 oz) container sour cream
  • 8 slices cooked bacon, crumbled
  • 1 (1 oz) pkg ranch dressing mix
  • 2 cups shredded cheddar cheese, divided, or more to taste

Directions

  1. Preheat oven to 350 degrees. Grease a 13X9-inch baking pan with cooking spray or butter.
  2. Combine hash browns, sour cream, bacon, ranch mix, and 1 cup cheese in a large bowl; stir until well mixed. Spread into baking pan; cover with aluminum foil.
  3. Bake for 45 minutes. Remove foil; sprinkle remaining cheese evenly across potatoes. Bake until cheese is bubbly and lightly browned around the edges, about 15 minutes.

  • 1 (16 oz) pkg uncooked rotini pasta
  • 1 lb ground Italian sausage
  • 1 (16 oz) jar pasta sauce
  • 2 (12 oz) containers cottage cheese
  • 1 (2.25 oz) can sliced black olives
  • 12 oz shredded mozzarella cheese
  • 2 (3 oz) pkgs sliced pepperoni

Directions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a medium casserole dish.
  3. Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 10 minutes, until al dente, and drain.
  4. In a skillet over medium heat, cook the sausage until evenly brown.
  5. In the prepared casserole dish, mix the cooked pasta, sausage, and pasta sauce.
  6. In a bowl, mix the cottage cheese, olives, and mozzarella cheese.
  7. Spoon the cheese mixture over the sausage and pasta mixture. Top with pepperoni slices.
  8. Bake 25 minutes in the preheated oven, until bubbly and lightly browned.
