1 (14.5 oz) can diced tomatoes with green chile peppers
1 (8 oz) bag frozen corn
¼ cup chopped fresh cilantro
3 scallions, chopped
1 tsp garlic powder
1 tsp onion powder
1 tsp ground cumin
1 tsp cayenne pepper, or to taste
salt to taste
1 ½ lbs skinless, boneless chicken breast halves
Directions
Step 1 Combine black beans, chicken broth, diced tomatoes with green chile peppers, corn, cilantro, scallions, garlic powder, onion powder, cumin, cayenne pepper, and salt in the crock pot. Season chicken breast with salt and lay atop the bean mixture.
Step 2 Cook on low for 9 1/2 hours or high for 6 hours.
Step 3 Remove chicken from slow cooker to a cutting board; shred into strands, return to the slow cooker, and stir into the bean mixture.
Step 4 Continue cooking on low for 30 minutes more.
