Ingredients
6 large hard-boiled eggs, peeled and chopped
3/4 cup mayonnaise
1/2 cup cooked, crumbled bacon
2 oz sharp Cheddar cheese, shredded
1/3 cup thinly sliced green onions
2 tsp Dijon mustard
1/2 tsp kosher salt
1/4 tsp ground black pepper
4 (2 oz) slices white bread
Directions
Step 1: Stir eggs, mayonnaise, bacon, Cheddar, green onions, mustard, salt, and pepper in a bowl until combined. Use the back of a fork to mash ingredients together until evenly combined.
Step 2: Spread half of the egg salad mixture evenly on 2 of the bread slices; top each with 1 bread slice. Cut sandwiches in half and serve.
