One Pot Easy Cheesy Vegetables and Rice

Ingredients
- 1 ½ tablespoons vegetable or canola oil
- ½ tsp fine sea salt
- 1 cup extra-long grain rice (15 minute)
- 2 cups frozen mixed vegetables
- 3 cups chicken stock
- 1 ½ cups shredded Cheddar cheese
Directions
- Step 1
Heat oil in medium sauce pan over medium-high heat.
- Step 2
Add remaining ingredients, except for cheese.
- Step 3
Bring to a boil for 1 minute.
- Step 4
Reduce heat to low, cover and simmer for 10 minutes, or until liquid is absorbed.
- Step 5
Add cheese and stir until melted and serve immediately.
